500g chicken fillet, finely cubed
2 Tbsp butter
1 tsp crushed garlic
2 Tbsp red & green pepper, chop into small cubes
1 tsp red chilli paste
1 tsp crushed chillies
1 tsp crushed cumin
1 tsp lemon pepper
1 tsp salt
2 large tomatoes, liquidized
1 Tbsp mayonnaise
2 Tbsp lemon
2 Large potatoes, boiled in jackets
1 egg beaten
½ cup grated cheese
Freshly ground pepper & salt to taste
½ tsp ground green chillies
2 Tbsp lemon juice
½ cup grated cheese
2 Eggs whites
1 Tbsp fresh parsley, chopped

Heat butter, fry garlic and red & green peppers. Add chicken, spices, tomatoes, mayonnaise and lemon juice. Add ¼ cup water. Mix well and cook on low heat until chicken is cooked. Peel boiled potatoes and grate while still warm. Leave to cool and then add egg, cheese, spices and lemon juice. Adjust salt to taste. Mix well put ½ the potato mixture on the base of an ovenproof dish. Cover potatoes with chicken mixture. Sprinkle cheese over chicken. Cover chicken with left over potato mixture. Sprinkle parsley and paprika over egg white. Cover with foil and bake in a pre heated oven of 180C until done.
