500gr chicken fillet, finely cubed
2 tablespoon butter
1 tsp crushed garlic
2 tbsp green pepper, chop into small cubes
2 tbsp red pepper, chop into small cubes
1 tsp fresh red chillie paste
1 tsp crushed chillies
1 tsp crushed cumin
1tsp lemon pepper
1 tsp salt
2 large tomatoes, liquidized
1 tbsp mayonnaise
2 tbsp lemon juice
2 large potatoes, boiled in jackets
1 egg, beaten
½ cup grated cheese
Freshly ground pepper & salt to taste
½ tsp ground green chillies
2 tbsp lemon juice
½ cup grated cheese
2 eggs whites
1 tbsp fresh parsley, chopped

Method:
Heat butter, fry garlic and red and green peppers. Add the chicken, spices, tomatoes, mayonnaise and lemon juice. Add ¼ cup water. Mix well and cook on low heat until chicken is cooked. Peel boiled potatoes and grate while still warm. Leave to cool and then add egg, cheese, spices and lemon juice. Adjust salt to taste. Mix well and put half the potato mixture on the base of an ovenproof dish. Cover potatoes with chicken mixture. Sprinkle cheese over chicken. Cover chicken with left over potato mixture. Beat egg whites stiff and spoon over potato mixture. Sprinkle parsley and paprika over egg white. Cover with foil and bake in a preheated oven of 180 degrees until done.
