50ml oil
2 large onions, sliced
10ml garlic finely chopped
25ml curry powder
1 chicken cut into portions
2 large tomatoes
750ml pumpkin or butternut, peeled and cubed
Salt and pepper to taste
Coriander leaves
Heat oil and fry onions, garlic and ginger for 5 minutes.
Add curry powder and fry for 1 minute.
Add chicken pieces, tomatoes, pumpkin, salt and pepper.
Stir well with metal spoon.
Cover pan and cook slowly for 30 minutes.
Stir in coriander leaves and serve on rice.
