500g chicken mince
1 tsp red chilli paste
1½ tsp green masala or green chilli paste
1 tsp salt
½ tsp ground black pepper
2 tsp tandoori masala
1 tsp dhana-jeeru (coriander-cumin powder)
1 tsp ginger-garlic paste
3 tbsp dry breadcrumbs
Handful of chopped dhania (fresh coriander)
Combine all ingredients together. Wet hands slightly and roll into balls. Fry in shallow oil in a non-stick pan until lightly browned all round.
Remove to a casserole dish.
To make the sauce:
3 tbsp butter
1 tbsp lemon juice
1 tsp garlic (optional)
Salt and pepper to taste
125ml fresh cream or long life cream
Pinch of dried herbs (optional)
Heat butter, lemon juice and garlic together. Stir in salt and pepper.
Add in the cream and simmer until slightly reduced.
Pour over kebab and serve warm with roti or puri.
