250g butter
1 tub cream cheese
375ml sugar
1 tsp vanilla essence
125ml chopped nuts
4 eggs
2 ¼ cups flour
1 ½ tsp baking powder
250ml raisins
Ripple:
½ cup sugar
1 ½ tsp cocoa
1 tbsp cinnamon
1 cup coconut
Method:
Cream the butter and sugar together. Beat in all the eggs one at a time. Add the flour, baking powder, and vanilla essence and beat well. Add the cream cheese, raisins and nuts. Grease a tube pan and sprinkle the bottom with ½ cup of chopped nuts. Add cake mixture to the pan and layer with the ripple mixture. Bake at 160 degrees. Cool and dust with icing sugar.
