Ingredients :
1 ¾ cups flour
3 tsp baking powder
¼ tsp salt
1/3 cup oil
1 cup milk
1 tsp vanilla essense
3 eggs separated
¾ cup castor sugar
coconut for topping
Method :
– Sift flour, baking powder and salt together.
– Make a well in the centre and add oil, milk, essence and egg yolks. Beat well.
– Beat egg whites until stiff. Gradually add sugar and continue beating.
– Fold this mixture into batter.
– Pour into cup cakes and sprinkle with coconut.
– Bake in 180 degree preheated oven for 20 to 25 minutes.
