4 eggs separated
1 cup castor sugar
1 cup flour
2 level tsp baking powder
½ cup cold tap water
½ cup oil
3 heaped tsp coffee
Beat egg whites until stiff. Add sugar gradually and beat. Then add in the yolks and continue beating. Sift dry ingredient except coffee together and add to add to the above mixture. Mix together water, oil and coffee and add over dry ingredients. Fold mixture and thereafter beat for a while. Bake @ 180 C for 20 min in 2 small round cake tins.
Topping:
250g butter – softened
2 cups icing sugar
2 Tbsp boiling water
2 heaped tsp coffee
Mix together all ingredients and beat well. Sandwich cakes together with some icing, using the rest for the top.
