Coleslaw (03.11.09)

 

½ green/red cabbage

1 green/red apple

½ pineapple

2 carrots

 

Method:

 

Shared cabbage, then soak it in salted water – then drain well (if using red cabbage sprinkle some lemon juice over it)

 

Grate carrots and chop apples and pineapples fine. Keep refrigerated.

 

Combine all fruit and vegetables except apples in a bowl and add in flavoured vinegar/oil/mayonnaise dressing and mix well. Apples must be added just before serving otherwise they will dis colour.

 

A simple dressing to add to the coleslaw is:
180ml olive oil
2 Tbsp white vinegar
2 Tbsp lemon juice
1 tsp celery seeds
1 tsp mustard powder, salt and pepper
2 tsp sugar
