500g firm white fish in fillets or cut into portions
1 tsp salt
1 tsp pepper
2 Tbsp lemon juice
2 Tbsp flour
Lemon wedges
For the batter
½ cup cake flour
½ tsp salt
2 eggs, beaten
40ml milk
4 Tbsp water
Oil for deep frying
Marinate fish in the salt , pepper and lemon juice for ½ an hour.
Sift flour and salt in a bowl
Whisk eggs , milk and water together
Add flour and whisk for a minute until you have a batter.
Take the fish out of the marinate and pat dry with paper towel. Coat with flour
Dip into batter and deep-fry in hot oil until golden and crispand floating on top of the oil
Remove and drain on paper towel.
Serve with lemon wedges.
