Prawn rissoles (Mozambique recipe)

From Mumtaz Barmania

3 large or 5 small onions (very finely cubed)
800g – 1 kg Prawn meat
1 full tsp salt
4 tblsp Green chillie and garlic masala
1 tsp Crushed black pepper
Nutmeg
1 and half tblsp maziena
1 and half tblsp flour
1 and half cups milk

Don’t cut prawns too small because they shrink when cooking. Cook onions in enough oil to remove the water. Add prawns and all the spices. While the prawns are cooking, mix milk, maziena, and flour until lump free As soon as the water cooks out from the prawns, add the milk mixture with 5 tbsp of fresh chopped parsley or dhania if you don’t have parsley. Continue mixing until it thickens. To avoid lumps, continue mixing without stopping in between. Once it’s thick, switch it off and allow to cool. Then fill moons.
