¼ cup olive oil
2 Tbsp sesame seeds
2 cups nuts (Almonds, Cashew Nuts, Pecan Nuts0
2 tsp crushed red chillies
1 tsp salt
2 cups pineapple
2 cups cucumber
¼ cup red pepper
½ cup dates
¼ cup feta cheese
1 pkt ready washed mixed lettuce
½ cup kraft mayonnaise
¼ cup mustard sauce
1 Tbsp brown sugar
2 Tbsp lemon juice
1 Tbsp soya sauce
½ tsp salt
Freshly ground pepper
Fry nuts and sesame seeds in olive oil until light pink.
Strain nuts and sesame seeds mixture and leave oil to cool.
Place nuts mixture on a tray, sprinkle crushed red chillies and salt over.
Mix dressing ingredients together add left over olive oil used for frying nuts.
Combine cucumber, pineapple, pepper, dates and feta cheese.
Pour dressing over the vegetables and mix well
Place salad on platter
Cover with fried nuts and sesame seeds mixture.
It is important that you assemble this salad just before serving.
