1 egg
2 tblsp flour
1 dessertspoon oil
1 tsp lemon juice
Pinch of salt
3 -4 tblsp water
Put flour and salt in a bowl. Make a well in centre and drop in egg yolk, oil, lemon juice and water. Beat with wire whisk until flour is worked in. continue beating for a few minutes. Allow to stand for 1 hour. Just before using, fold in stiffly beaten egg white with metal spoon. It too thick you may use more water to thin down batter.
This is a lovely batter for fish and if instructions are followed, no oil will seep through. Enjoy
