2 ½ cups flour
1 tsp salt
1 ½ instant yeast
1 ½ tsp sugar
1 Tbsp olive oil/ oil
¾ Luke warm water
For brushing:
6 Tbsp olive oil
Fresh Rosemarie or thyme
2 garlic pods flaked and chopped fine
1 Tbsp coarse salt.
Sift flour, salt and yeast in a bowl and make a soft dough with the oil and water. On a floured board knead the dough for about 10 min or until the dough is elastic. Grease a mixing bowl with olive oil and place the dough therein. Brush lightly with olive oil and allow it to rise till doubled in volume. Divide dough into 2 or 4 parts and roll each one out till they are 15 mm thick. Press holes on top of dough with forefinger and brush lightly with olive oil, press the rosemary or herbs into holes and sprinkle chopped garlic over. Allow this dough to rise again for 15 to 20 min in a warm place or until they are 2.5cm high. Brush dough with olive oil sprinkle coarse salt over. Bake at 220 degrees for 15 to 20 min
