Ingredients:
1 cup quinoa
2 cups water
1 large cucumber, diced
2 large tomatoes, diced
1/2 red onion, finely chopped
1 cup fresh parsley, chopped
1/2 cup fresh mint, chopped
1/4 cup olive oil
1/4 cup lemon juice
Salt and pepper to taste
Directions:
Rinse quinoa thoroughly under cold water. In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender and the water is absorbed. Let cool.
In a large bowl, combine the cooled quinoa, cucumber, tomatoes, red onion, parsley, and mint.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Pour the dressing over the quinoa mixture and toss to coat evenly.
Chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
