Garlic – Lemon Schnitzels (11.09.07)

½ kg chicken fillet

1 egg

1 Tbsp maizena

Green masala to taste

1 tsp crushed  garlic

2 Tbsp lemon juice

1 tsp grated lemon rind

2 Tbsp chopped parsley

1 tsp salt, pepper to taste

1tsp ground black pepper

 

Method:

 

Cut chicken in ½ horizontally

Flatten with rolling pin

Beat together all ingredients

 

Dip chicken into marinade and coat in breadcrumbs.

Fry in hot oil until golden brown.
