Little oil
2 onions finely chopped
1 large potato peeled and finely grated
1 kg fresh shelled green peas
2 litres good chicken stock
1 large apple peeled and finely grated
4 tsp brown sugar
3 sprigs fresh garden mint
sea salt and black pepper to taste
Lightly brown the onions and potatoes in the oil. Add all the other ingredients. Simmer with the lid on for 10 – 15 minutes. Pour everything into a liquidizer and blender until smooth. Serve hot in bowls with a dash of cream in the centre, dust with coarsely ground black pepper and add a sprinkling of chopped fresh mint.
