2 cups flour
4 level tsp baking powder
1 tsp cinnamon
1 tbsp poppy seed
½ cup brown sugar
1 tbsp lemon grind
½ cup oil
2 eggs
1 tsp lemon essence
Handful coconut
¾ cup fat free yoghurt
¼ cup skim milk
Syrup:
½ cup orange juice
1 tsp lemon juice
¼ cup sugar
Method:
Mix all syrup ingredients together and boil for 5 min. Mix all muffin ingredients together. Halfway fill greased muffin pans with batter. Bake at 180 degrees for +/- 20 min. Drizzle syrup on baked muffins before removing from pan
