Ingredients:
Pudding:
1 cup sugar
1 egg
1 Tbsp soft butter
4 Tbsp apricot jam
1 cup milk
2 tsp vinegar
2 tsp vanilla essence
1 cup cake flour
1 tsp bicarbonate of soda
Sauce:
125ml fresh cream
20g butter
4 Tbsp sugar
2 Tbsp water
Method:
Preheat oven to 180. Beat together sugar, egg, butter and jam until fluffy. Combine milk, vinegar and vanilla essence. Sift flour and bicarbonate and add egg mixture alternately with the milk. Pour into greased oven proof dish cover with foil and bake for 40 to 50 minutes until firm. Prepare sauce by placing all the ingredients in a pot and bring to boil. When pudding is baked, remove from the oven and por over the sauce. Serve with fresh cream or pouring custard.
