1. Take 1 cup cous cous and mix with half cup boiling water and leave to soak up all the water. When soaked add 1 tsp sirachia or any chillie sauce and 1 tsp cumin seeds.
2. In a pan with olive oil cook 1 handful diceed 3 colour peppers, 1 handful diced branjal 1 handful chick peas, 1 handdul cranberries, dates and dried apricots mixed.Cook till soft but not over cooked and season with enough salt and pepper.
3.Add all cooked veggies into cous cous mixture. Add brocolli and other veggies to get more veggies in.Garnish with chopped dhanya and parsley.
