Mutton Kitchro Recipe

1 onion finely chopped
1 kg mutton (leg meat) cut into pieces (add bones also while cooking this so you can save the broth
2 tbsp Chilli powder
2 tbsp Turmeric
2 tbsp Salt
2 tbsp Cumin powder
2 tbsp Coriander powder
2 tbsp red ginger garlic masala
¼ cup ghee
2-3 cups water
Put all ingredients for mutton in a pot. Cook until tender. Add water and cook meat falls off the bone. Works well in One Pot or  pressure cooker

Kitchro
1 cup rice
1 cup oil dhall
2 cups wheat
1 cup chana dhall
Salt to taste
Boil above together until mushy. Alternatively you can Use a ready made haleem mix Use a beater to blend slightly.
Add to mutton. Add vagaar

Vagaar
2 tbsp ghee
1 onion finely chopped
Handful of Curry leaves
3 cloves garlic (sliced)
1 tbsp whole jeeru
2 green chillies sliced
Place ingredients for vagaar in a frying pan. Saute until onion turns golden brown in colr. Add to pot Serve with tamarind or  katchumber

Salt to taste
1 cup tamarind water
Handful of finely chopped coriander
