Oatmeal breakfast (30.11.06)

¼ cup brown sugar
¼ cup chopped walnuts/ peacan nuts
¼ tsp cinnamonpowder
2 eggs
1 ¼ cups applesauce
1/3 cup oil
¼ cup butter milk
¾ cup sugar
1 ½ tsp baking powder
¾ tsp cinnamon powder
1 ½ tsp baking powder
½ bicarb of soda
½ tsp salt
¼ tsp nutmeg
½ cup diced apricots
1 cup oats

Butter & flour a 9×5 loaf pan. In a small bowl, mix together the first 3 ingredients set aside. Whisk together the eggs applesauce, oil and buttermilk In another bowl, mix the dry ingredients using a teaspoon of the final mix to the coat the diced fruit. Stir the oats, than the liquid ingredients, into the dry ingredients, just until everything is evenly moistened . Scatter the fruit over the batter & gently stir it in. Scrape the butter into prepared pan & sprinkle the nutty topping over the top. Bake for 55065 min @ 180 dgrs until knife inserted into the centre comes out clean. Let the bread cool to room tempreture before serving.
