Orange Cake (13.05.2010)

 
250g butter
1 ¼ cup sugar
3 Tbsp oil
5 eggs
2 cups cake flour
2 cups self rising flour
3 tsp baking powder
1 cup orange juice
 
Topping for cake:
1 cup icing sugar
2 Tbsp orange juice
Grated orange rind
 
 
Method:
 
Cream butter and sugar. Add oil and eggs and mix well. Add sifted cake and self rising flour and baking powder and mix well. Lastly add orange juice ad blend well. Spoon batter into 2 greased cake tins and bake it at 180C for 45 min or until skewer inserted comes out clean.
 
Topping; mix icing sugar and orange juice together. Once cake has cooled decorate with icing and grated orange rind.
