Ingredients:
1 kg paapri (mixed one-flat and with seeds)
2 onions chopped
1 tsp whole jeeru
5 tblsp oil
1 tsp salt
1 tsp arad
2 tblsp dry dhana
2 tblsp green masala
2 tblsp red masala
2 bunches spring onions (chopped)
3 tomatoes (chopped)
Method:
Make a vagaar with jeeru, onions and oil, add spices and masala and braise for a while, add paapri and cook till almost done. Add tomatoes and spring onions and cook further. Make moothias and put on top of paari wit a little water and lemon juice. Steam till moothia is done. Before serving add about 1 to 11/2 cups inkomaas, cook for a further 5 min and serve immediately.
Moothia
3 bunches methi bhaji
1 onion grated (water squeezed out)
3 tblsp green masala
Pinch of arad
1 tsp salt
1 tblsp dry dhana
1 bunch spring onions
½ bunch green dhana
1 cup cake flour
1 cup chana flour
Mix everything together and add a tsp of baking powder to the moothia, if dough is too soft add a little bit of cake flour, form into rounds and add in pot of paapri.
