Paratha Burger Recipe (Safeera Kaka)

Dubai’s Viral Paratha Burger

For the Paratha Buns (my recipe):

* 4 cups cake flour

* 1 tablespoon salt

* 1 tablespoon sugar

* 2 cups boiling water

* ¼ cup melted butter

* ¼ cup vegetable oil

* Extra flour (for dusting)

* Oil (for frying)

For the Smash Burgers:

* 4 large spicy beef burger patties (halved for 8 portions)

* 8 slices cheese (cheddar or mozzarella)

* 2 medium onions, thinly sliced

* 2 tablespoons vegetable oil (for frying onions)

For Assembly:

* Sriracha mayo (or sauce of choice)

* Fried onions

* Smash burgers with cheese

* Paratha buns

Method

  1. In a large bowl, combine flour, salt, and sugar.
  2. Carefully pour in the boiling water, stirring quickly with a spoon.
  3. Once cool enough to handle, knead by hand for 10 minutes until smooth and elastic.
  4. Roll dough into a 40cm log, divide into 8 equal portions.
  5. Roll each portion into a ball, then into a small log.
  6. Flatten slightly on a surface and cut into thin strips. Scrunch strips together.
  7. Melt butter and mix in the oil. Dip each dough pieces into the butter + oil mixture.
  8. Cover and rest for 5 minutes.
  9. Roll each rested ball tightly into a circle.
  10. Cover again and rest 10 minutes.
  11. Lightly flour your work surface.
  12. Roll each dough circle into a flat paratha bun.
  13. Fry on medium heat in shallow oil for 2 minutes per side or until golden and puffed.
  14. In the same pan, add a little oil.
  15. Fry sliced onions until golden and caramelized. Remove and set aside.
  16. Halve the burger patties, then place each half between two sheets of parchment paper.
  17. Smash flat with a spatula or rolling pin.
  18. Heat oil in a wide pan, fry burgers until cooked.
  19. Add a slice of cheese on top of each patty, cover pan, and let it melt.
  20. Take one paratha bun, spread sriracha mayo (or your choice of sauce).
  21. Place smash burgers with melted cheese.
  22. Add a generous spoonful of fried onions.
  23. Cover with another paratha bun.
  24. Press lightly, serve hot, and enjoy!
