2 sticks celery – sliced
¼ cup sweet corn
1 granny smith apple
1 cup seedless grapes – halved
1 red pepper – diced
½ cup sultanas
1 ½ cup cooked basmati rice
¼ cup pecan/walnuts chopped
6 lettuce leaves – washed
Paprika
Dressing:
4 Tbsp mayonnaise
1 Tbsp lemon juice
1 tsp paprika
Pinch of salt
Method:
Combine celery, sweet corn, apple, grapes, pepper, nuts, rice and sultanas in a bowl.
Place dressing ingredients in a bowl and whisk well
Pour dressing over salad- mix well
Line a platter with lettuce leaves and spoon salad over, then sprinkle top with paprika.
