Ingredients
3 cups flour
½ tsp salt
1 ½ tsp instant yeast
2 tblsps olive oil
1 tsp butter
¾ cup lukewarm milk
¾ cup lukewarm water
Method
• sift together flour,salt and yeast. rub in oil and butter
• combine milk and water, add flour and knead to a soft dough
• place in a warm spot and allow to rise until double its size
• punch down and divide into 6 equal portions
• roll out each portion into a circle and place onto a tray sprinkled with flour
• cover with a cloth and allow to rest a further 20 minutes
• bake in a very hot oven 220c for about 10 minutes or until bread puffs up in the centre and is a delicate brown. remove from tray onto rack to keep soft, wrap in a cloth
• to stuff the bread slice off the tops or down the sides and gently open to form a pocket.
• stuff the pitas with filling of choice and enjoy
