1 x whole chicken or 1.5kg chicken fillet
½ cup organic coconut oil
1/3 cup BBQ sauce
3 TBS Worcestershire sauce
2 Tblsp minced garlic
1 Tblsp onion powder
2 tsp fresh lemon juice
4 tsp Sriracha sauce
1 tsp yellow mustard
2 tsp salt
Black pepper to taste
Mix the spices together to make a marinade
Take 2/3 of the marinade and marinate chicken
Leave for 20 minutes
Cook in pot on low until half done
Transfer half cooked chicken to baking tray
Add the balance of the marinade to the chicken
Drizzle a little ghee over the top.
