Potato/Aloo Fry

Basic recipe
Always use good quality potatoes..it affects taste and cooking quality
3 Medium Potatoes
Peeled and sliced into rounds about 3mm thick
Rinse and drain well Put into a dish
Add 1 level tsp fine salt
Half tsp ginger garlic
Half tsp chilli powder
Half tsp coarse dry red chillies
Half tsp arad/turmeric powder
1 level tsp whole cumin /jeeraa seeds
Toss well
In a pot add
quarter cup of oil
Tip*oil is important to get a nice fry..u can drain out the oil before serving and reuse
1 slit green chillies
2 sprigs of curry leaves
Gently heat up the oil

Then add in the spiced potatoes. Add some hot water to the dish and pour over the potatoes. Close the pot and allow to cook on medium heat. Add a little bit more water if potatoes are taking long to cook. Lastly remove lid and fry off on high if u like or leave it soft. Garnish as desired
Green dhania..shallots ..etc

Variation..
Add chunks of green or red peppers
Or sautè some onion first then add potatoes
U can add in eggs and make a aloo fry scramble
