2 Tbsp finely chopped or grated onion ( 1 0nion)
2 Tbsp butter
¼ cup flour
2 cups of milk
2 cups of cooked mashed pumpkin
Salt and pepper to taste
A dash of grown cinnamon and nutmeg
½ tsp each of ginger and red chillies red garlic
½ cup fresh cream
2 cups vegetable stock or vegetable soup powder.
Method:
Braise onion and red ginger in butter and when it begins to change color add in flour and milk and stir over low heat till smooth and begins to boil.
Add in vegetable tock/powder and simmer for another 10 min, then add in the well mashed pumpkin, cream and spices- simmer for another 10 min until all is well integrated.
Before serving, garnish with chopped greens.
