2 chicken breast ( halved)
1 red onion, chopped
2 cloves garlic, crushed
1 Tbsp minced fresh ginger
2 large peppers (red & Yellow)
4 green chillies, finely chopped
1 small can coconut milk
10 cherry leaves
Large handful fresh coriander- chopped
Zest of 1 small lime
Salt to taste
Method 1:
Mix everything together and cook until well done but saucy.
Method 2:
Marinade everything besides the coconut milk + fresh coriander
Cook in pot until tender
Add coconut milk until saucy.
Decorate: with zest of lemon.
