SALT AND PEPPER ROAST RECIPE

1 back or front leg
1 onion (grated)
3 whole green chillies
1 tsp mustard powder
5 cloves garlic
Few whole black peppercorns
5 tblsp white vinegar
Marinate leg in the above ingredients, put on low heat and cook slowly. Once meat is nice and tender add 3 tblsp worster sauce and ¼ 1b Butter. Leave to cook till nice and brown. Before serving, sprinkle with black pepper and serve with veggies
ROAST LEG / FILLET STEAK
Ingredients
1 cup tomato sauce – 2 tsp green masala chillies – Salt & freshly ground pepper to taste – 1 tblsp Dhana – 1 tblsp Jeeroo – Pinch saffron – Juice of 1 lemon – 2 tblsp ginger garlic.
Mix all above ingredients together – and then marinate the meat overnight. Cook in a POT until tender. Add more water if necessary until done. Use the sauce of the marinade to moisten the meat while cooking. Serve with corn, fried mushrooms and cubed fried potatoes, and garlic pita bread.
LEG ROAST
Ingredients
Full leg
Marinade :
1 tablespoon garlic
1 teaspoon ginger
1 teaspoon red masala
2 tablespoon Robertson BBQ spice
1 tablespoon steak and chops spice
1 teaspoon black pepper
1 teaspoon garlic and herb
1 teaspoon crushed red chillies
1 ½ teaspoon dhana powder / crushes dhana
½ teaspoon whole jeera seeds
Salt to taste
1 tablespoon vinegar
1 tablespoon Worcester sauce
Sauce :
2 tablespoon steers peri
2 tablespoon tomato sauce
1 teaspoon mustard sauce
2 tubal steers garlic sauce
1 tablespoon steers BBQ sauce
1 teaspoon lemon juice
Method
Marinade leg over night for flavor to sink in with all the spices .
Add the leg into a pressure cooker with some water and give it 4 to 5 whistles ( if you don’t have a pressure cooker , cook in a large pot until soft and tender ) add water if necessary .
Do this 30 minutes before serving .
In a huge Pyrex dish add the cooked leg pouring all the sauce over the leg , add some blobs of butter and let in cook in a preheated oven until the sauce starts to simmer .
STEAMED ENGLISH VEGETABLES TO SERVE WITH ROASTS
Ingredients:
Sweetcorn
Carrots
Butternut
Sweet potato
Baby marrrow
Robot peppers
Method:
Steam veggies with salt, pepper and butter till half way steamed. Empty veggies into a pyrex dish and add about 4 to 5 tblsp sweet chilli sauce to the vegies, pour olive oil and mix well, crumble feta cheese over and bake for about 20 min.
