Rosti recipe (courtesy of Zaaheda Mohammed) (23.05.13)

30g butter
3 tablespoons olive oil
1 cup chopped shallots
1 teaspoon ground garlic
¾ cup chopped pine nuts
1½ cups grated potato
1½ cups grated sweet potato
1 teaspoon ground green chillies

NOTE: Soak grated potatoes in water to remove starch.

3 eggs, lightly beaten
1 cup flour,1 cup rice flour USE RICE FLOUR ONLY FOR GF
1 teaspoon fine salt
2 teaspoons baking powder
1.  Heat butter in a pan, add olive oil, shallot, garlic, chillies, potatoes &pine nuts.
2.  Cook until potatoes are sticky. Cool.
3.  Stir in eggs and flours.
4.  Shape teaspoonful of mixture into balls and flatten slightly.
5.  Fry in shallow medium hot oil on both sides until brown.Now freezer suitable
6. Serve with piped sour cream over each one. PG 82 SAVOURY JOURNEY EXPRESS
