2 cups flour
2 cups sugar
Pinch of salt
1 tsp bicarbonate of soda
125g butter
1 cup water
1/2 cup oil
1/2 cup cocoa powder
2 extra large eggs
1/2 cup buttermilk or yogurt
Sift the flour, salt and bicarb
Heat the oil, butter, water, sugar, cocoa powder in a saucepan until the butter is melted and all the ingredients are well incorporated.
Allow to cool
Pour the cocoa mixture into the flour mixture
Mix the eggs and buttermilk and add to the rest of the ingredients
Pour into 2x 22 cm ring pans or cupcake tins
Bake in a preheated oven until a toothpick inserted comes out clean
You can decorate with buttercream frosting or ganache
