Hake with stir fry veggies
1 kg hake fish
1/4 cup 1000 island dressing
1 tsp garlic flakes
1 tsp salt
1 tsp lemon pepper
1 tsp red chillies
marinate fish in above ingr, then make stir fry with..
1 onion
1 tomato
1/2 green pepper
Olive oil
Season with salt and pepper
Layer fish in pyrex, add stir fry on top of fish drizzle with olive oil and bake for 1/2 hour till done. Garnish with parsley and serve.
Prawns in tomato sauce and coconut milk
1 kg prawns (cleaned and deveined)
1 tbl chilli garlic paste
3 tbl lemon juice
2 tbl butter
2 tbl ghee
1 onion chopped
2 tsp crushed garlic
1 tin tomatoes (liquidised)
3 tbl tomato puree
2 tbl chilli garlic paste
1 tbl dhana
1/2 tsp arad
1 tsp salt
5 tbl coconut milk
Chopped dhana for garnishing
Method
Marinate prawns with chilli garlic paste and lemon juice, heat ghee and saute onions, add garlic till golden brown. Add tomato puree and cook for further 5 minutes. Fry prawns in butter for few min, then add to sauce with rest of masala and spices and cook. Add coconut milk and simmer till sauce thickens. Garnish with chopped dhana ad serve with rice.
Tasty kingklip
500gr kingklip
2 tbl maizena
2 tbl fresh cream
Salt and pepper to taste
2 tbl green masala
4 tbl lemon juice
Flour for coating
2 tbl roasted almonds
Method
Cut, wash and drain fish, make a paste with maizena, cream, green masala, salt, pepper and lemon juice. Marinate for a while, dip in flour, fry in hot oil.
Make lemon butter sauce with 60gr butter and 2 tbl lemon juice, pour over fish and grill. Serve with chips and salad.
