Spinach Chicken Roll (25.09.07)
Ingredients
6 Chicken breast
1 Tbsp ground garlic
1 Tbsp ground chillies to taste
2 Tsp aromat
1 Tsp lemon pepper
2 Tbsp lemon juice
1 Tbsp olive oil
Method:
Wash and pat chicken breast dry.
Place on a board and pound until it is flattened and cut into rectangles.
Mix al above ingredients and marinate chicken for a few hours.
½ bunch spinach washed and chopped fine.
1 onion chopped finely and salt to taste.
Heat olive oil in pot and braise 1- Tbsp garlic.
Add spinach, onion, salt and steam for 15 min.
Add 2 Tbsp mayonnaise and 3 Tbsp fresh cream.
Remove from stove and mix well.
Palce a Tbsp of spinach on each piece of breast.
Roll it up and stick a toothpick into center to keep it from opening.
Layer in a pyrex dish.
Mix together 2 Tbsp mayonnaise and ½ tub fresh cream.
Pour over fillet.
Bake in oven till tender but not dry.
Serve with green salad and pita bread.
