Chicken Strips
500g chicken fillet cut into strips
1 tsp salt
1 tsp fresh red chilli paste
¼ tsp turmeric powder
1 tsp lemon pepper
1 tsp crushed cumin
3 Tbsp Nando’s Peri Peri sauce
3 Tbsp Mayonnaise
2 Tbsp lemon juice
2 Tbsp olive oil
2 tsp crushed garlic
¼ cup tomato puree
½ Cup Fresh Cream
Combine all the ingredients and marinate the chicken for 3 – 4 hours. Heat olive oil, fry the garlic and add the chicken strips. Braise for a few minutes and add the tomato- puree and water. Cook on low heat until the chicken strips are tender. Add the fresh cream and stir well.
Tomato Rice
1 ½ cup rice
2 Tbsp olive oil
1 Tbsp crushed garlic
2 Tbsp red pepper, finely cut
2 Tbsp green, finely cut
4 Large tomatoes, liquidized
1 Tbsp tomato puree
½ tsp fresh red chillies
½ tsp lemon pepper
1 tsp salt
1 tsp crushed cumin
¼ tsp basil
Cook rice in salted, boiling water and drain. Heat oil and fry garlic and red and green peppers. Add the tomatoes, tomato puree and spices and cook on low heat. Add the rice and mix well. Simmer on low heat for 10- 5 Minutes.
