Thai Coconut Chicken Soup

Ingredients
1 tblspn coconut oil
1/2 chopped onion
1tsp crushed garlic
2 chopped green chillies
3 pieces sliced ginger
2 stalks lemon grass cut in 4 cm
2 chicken breasts cut strips
White button mushrooms sliced
Yellow and red pepper slices (about 6 slices ea)
1 stock cube
2 tblspn fish sauce (woolies)
1 tin coconut cream or milk
2/3 tblspn lime juice
2 tblspn Maziena dissolved in water

Method:
Melt coconut oil and add onions, garlic, ginger, peppers lemon grass and chillies. Cool for few minutes. Add in chicken and mushroom and a little water and cook through. Add in coconut milk and one can water. Add I. Fish sauce and lime juice. Last add the Maziena mixture.
