ROTI
4 cups flour
1 tsp salt
4tblsp ghee
1 tsp sugar
2 cups boiling water
Mix flour, salt, sugar and ghee well then add boiling water to make a nice soft dough, leave dough to rest for 30 min, make 8 to 9 balls, roll out to side plate size, smear with ghee and fold then roll out dough to size you require, fry on hot tawa with ghee and oil.
PURI
2 cups flour
2 tblsp soft butter
1/2 tsp salt
1 tsp baking.powder
1 cup cold milk
Mix flour, salt, baking powder and soft butter till it resembles bread crumbs, add cold milk to make soft dough. Roll out and cut into squares, fry in hot oil till golden brown.
