Weetbix Rusks

Step 1

Preheat oven to 180 degrees and prepare a baking tray by spraying with non-stick spray

Step 2

Dry ingredients

2 & half cups of cake flour

2 & quarter cups of whole wheat flour

6 blocks of Weetbix crushed 2tblsp baking powder

1 tsp salt

1 tsp bicarbonate of soda

Mix together all the above dry ingredients together in a large bowl

Step3

Melt 250g of butter

Cool melted butter then add in the remaining wet ingredients

1 cup butter milk

1 large egg

1tsp vinegar

Step 4
Combine the wet and dry ingredients to create a dough. The dough should not be too wet so you can add abit more flour at this point if you need to. Dough needs to be pliable dough that can hold its shape.

Step 5
Press dough into a greased baking tray. Then using a knife cut the rust shape into the dough. This will make it easier to break the rusk apart after they have been baked.

Step 6
Bake the rusks for 40 minutes or until baked through…a tooth pick should come our clean. Lower the oven to 60 degrees. Cut and separate rusks so that they dry out completely.
