Whipped Cream Filled Chocolate Cupcakes

Chocolate cupcake:

– 1 cup cocoa powder

– 1 1/2 cups flour

– 1 1/2 teaspoons baking powder

– 1 teaspoon bicarbonate of soda

– A big pinch of salt

– 4 eggs

– 1 cup caster sugar

– 1 cup brown sugar

– 2/3 cup oil

– 2 teaspoons vanilla essence

– 1 cup plain yoghurt

 

Cream Filling

– 500ml whipping cream

– 1 teaspoon vanilla essence

– 1 tablespoon icing sugar, sifted

 

Choc Ganache

– 1 slab (180g) dairy milk chocolate

– Dessert cream, for desired consistency

 

Method:

Preheat the oven to 175C and prepare 2 cupcake trays with cupcake liners.

Sift the dry ingredients in a medium bowl and set aside.

In a separate large bowl, whip the eggs and sugars above for 3-4 minutes.

Add the oil and vanilla to the egg sugar mixture.

Alternate adding the dry ingredients and the yoghurt, mixing until combined between each addition.

Spoon batter into prepared cupcake trays.

Bake in the preheated oven for 20minutes or until a skewer comes out clean. Allow to cool for 2 minutes in the pan before transferring to a wired rack to cool completely.

To make the cream filling, whip the above until desired peaks form. Once the cupcakes have cooled, slice the tops, set aside, pipe the whipped cream then pop the tops back on.

To make the ganache, break up the slab in a bowl, melt the chocolate in microwave then stir in the dessert cream, adding slowly and mixing in-between each addition to reach the desired consistency (adding more dessert cream will make it runnier. Spoon and spread the chocolate ganache on the tops of the cupcakes and finally top as desired, here I added chopped Oreo pieces.

You can store these in the fridge in an airtight container ♥️ enjoy!
