INGREDIENTS:
1kg hake fillets – cut into desired sized pieces
1 tsp black pepper
1tsp cayenne /red chillies
1 tsp dried herbs – oregano, thyme, basil
1 tsp salt
1 tsp paprika
½ tsp white pepper
Plus minus 2 cups yoghurt
SEASONED FLOUR
2 cups flour
½ tsp paprika
½ tsp white pepper
½ tsp onion powder
1 tsp salt
¼ tsp cayenne/red chillies
½ tsp salt
½ tsp garlic powder
METHOD
Marinate fish in the following for a few hours. Salt,black pepper, paprika,cayenne/red chilles,white pepper,dried herbs and yoghurt. For the seasoned flour , mix together flour spices and keep aside. Then dust the marinated fish in the flour mixture and fry in oil on a medium heat for plus minus 10 to 15 minutes.
REMEMBER NO TO OVER CROWD PAN, JUST FRY A FEW PIECES AT A TIME TIL GOLDEN BROWN.
#variation: zinger fish can also be made with chicken and could be used for chicken or fish burgers
