250g butter or margarine
1 tsp vanilla essence
¾ cup brown sugar
½ cup chopped nuts
1 egg
1 cup bran flakes
½ tsp bicarbonate of soda
2 ½ – 3 cups plain flour
Method:
Mix butter, vanilla and sugar in an electric mixer until smooth. Beat in the egg then fold in the rest of the ingredients.
Roll out dough 6mm thick, scrape with a fork. Cut into rectangles 5cm x 3cm. place 2cm apart on baking tray and bake at 180C for 10 minutes until light brown.
