Almond fudge (22.06.17)

90g or approx. 6 tablespoons butter
3 cups almond flour
½ cup nut butter
½ cup maple syrup or honey
¾ cup chopped cranberries
½ teaspoon salt

Put butter into a pan and Heat over medium high heat and stir butter until it is light brown and gives off a nutty aroma. It’s important to watch it closely or it will burn, but browning the butter is what makes this fudge so delicious. Allow butter to cool before moving on to the next step. Add browned butter,almond flour, nut butter, maple syrup and sea salt to a food processor and mix thoroughly. If you don’t have a food processor, add all dry ingredients to a bowl and mix, then add wet ingredients and mix again. The food processor makes the dough a little more smooth. Press dough into a glass bowl lined with wax paper and freeze for at least 5 hours. Cut into chunks before serving.
