Chocolate Log Recipe

1 packet of store-bought wafers in chocolate flavour
1 slab of Cadbury chocolate
a few blocks of baking chocolate (this will allow the chocolate to harden)
Marshmallow fluff (recipe below)
Marshmallow Fluff
1 1/4 cups of caster sugar
3 egg whites, at room temperature
1/4 cup of water
1/4 tsp cream of tartar
1 1/2 teaspoon vanilla

In the bowl of an electric mixer, whisk together the sugar, egg whites, water and cream of tartar. Set the bowl over a pan of barely simmering water and whisk until sugar is dissolved and the mixture reaches 160 degrees F on a thermometer. Transfer the bowl to a stand mixer fitted with a whisk attachment and beat on high speed until the frosting form stiff peaks, about 12 to 16 minutes. Add the vanilla essance and beat until combined. Temper chocolate and add 1 tab of oil. Make sure chocolate has cooled down a bit before coating, as hot melted chocolate will melt the marshmallows filling.
