125g butter or margerine
¾ cup sugar
½ tsp vanilla essence
1 egg
2 cups flour
2 tsp baking powder
2 tblsp apricot jam
1 tin pie apples or 2 big apples thinly sliced
1 0r 2 tsps cinnamon powder
Method
• set oven to 180
• grease a 2 cm pie dish/pyrex
• cream butter sugar and vanilla essence
• beat in 1 egg
• work in flour and baking powder…must be a slightly sticky mixture
• divide dough into 2 equal parts
• press one half into pie dish
• cover bottom with jam
• place apple slices on top
• sprinkle cinnamon powder
• grate remaining half of dough
• bake for 40 minutes until brown
