Ginger Vinaigrette
Vinegar 2 tbsp
Fresh chives, chopped 1 tbsp
Fresh ginger, grated 1 tsp
Salt ½ tsp
Freshly ground pepper ¼ tsp
Cooking Oil 1 tbsp
Chicken Salad
Salt ½ tsp
Freshly ground pepper ¼ tsp
Cunim ¼ tsp
Ground red pepper 1 pinch
Boneless chicken breast halves 4
Cooking Oil
Salad greens various kinds 8 cups
Mango peeled and sliced 1 large
Golden apples 2 thinly sliced
Sesame seeds ¼ cup
Method:
Prepare the ginger vinaigrette by combining the vinegar, chives, ginger, salt and pepper in a small bowl. Gradually whisk in cooking oil for ¼ cup of dressing. Combine salt, pepper, cumin (zeera) and red pepper in a bowl and sprinkle over both sides of the chicken breast halves. Coat a pan with cooking oil and heat for 1-2 minutes over medium heat. Cook chicken on each side for 5-6 minutes till ready transfer to cutting board. Toss the salad leaves, mango and apple slices with 3 tbsp. dressing arrange the salad on 4 dinner plates and slice the chicken in strips before distributing on each plate. Sprinkle I tbsp. sesame seeds (can be – toasted) over each salad. Serve immediately.
