Braai salad recipe (28.02.13)

GREEK SALAD
Salad:
6 tomatoes, cut into wedges
½ red onion, sliced into rings
1 cucumber, halved lengthwise and sliced
1 green pepper, sliced thin
8 ounces feta cheese, crumbled
32 kalamata olives
Dressing:
6 Tablespoons extra virgin olive oil
3 Tablespoons lemon juice
1 clove garlic, minced
½ teaspoon sea salt
½ teaspoon freshly ground black pepper, and extra for garnish
1 teaspoon dried oregano
Directions:
1. Combine the olive oil, lemon juice, garlic, salt, pepper and oregano in a small bowl.
2. Place all the salad ingredients into a large bowl.
3. Pour the olive oil dressing over the salad and toss gently to combine just before serving.

CUCUMBER SALAD
1 medium cucumber, sliced
1 medium onion, sliced
2 teaspoons salt
2 Tablespoons sugar
2 Tablespoons vinegar
1 cup cold water
1/4 teaspoon pepper
Directions:
Mix all ingredients together and chill before serving

POTATO SALAD
 Potatoes cubed and boiled
1 onion chopped
Salt to taste
½ tsp black pepper
2 tblsp mayonnaise
1 cup whole kernel corn
1 green pepper chopped – optional
3 tblsp milk
1 cup fresh cream
1 tsp crushed green chillies
Directions
Braise chopped onion in 4 tblsp butter until soft.
Then add in boiled cubed potatoes and rest of ingredients. Mix well and serve.
WALDORF SALAD
Ingredients:
1 cup granny smith apples, chopped
1 Tablespoon lemon juice
1 cup celery, chopped
1/4 cup mayonnaise
1/4 cup raisins
1/4 cup walnuts
Directions:
1. Sprinkle apples with lemon juice after they are cut.
2. Add all other ingredients.
3. Toss to coat all pieces with mayonnaise.

COLE SLAW SALAD
½ green/red cabbage
1 green/red apple
½ pineapple
2 carrots
 
Directions
Shred cabbage, then soak it in salted water – then drain well (if using red cabbage sprinkle some lemon juice over it)
 
Grate carrots and chop apples and pineapples fine. Keep refrigerated.
 
Combine all fruit and vegetables except apples in a bowl and add in flavoured vinegar/oil/mayonnaise dressing and mix well. Apples must be added just before serving otherwise they will dis colour.
 
A simple dressing to add to the coleslaw is:
180ml olive oil
2 Tbsp white vinegar
2 Tbsp lemon juice
1 tsp celery seeds
1 tsp mustard powder, salt and pepper
2 tsp sugar
