Ingredients:
8 slices bread
Butter for smearing
4 large eggs
1 cup sugar
750ml milk
1 tsp vanilla essence
½ cup mixed fruit (cake mix)
Or blanched cut almonds
Ground nutmeg
Method:
Trim crust from bread. butter each slice and cut in half diagonally making 16 triangles. arrange one layer of triangles overlapping them slightly on the base of greased 30cm x 20cm ovenproof dish. arrange 2nd layer of triangles in the opposite way to the first. beat eggs, sugar, milk and vanilla together and pour ½ of this mixture over bread. stand for ten minutes to allow liquid to be absorbed. sprinkle cake fruit mix and or almonds over bread and pour remaining milk mixture over. sprinkle nutmeg powder over the top. stand dish in a large roasting pan and pour in enough hot water to come ½ way up the sides of the dish. bake at 160 deg for 40-45 minutes or until pudding is set.
