Butter Chicken – my quick go to recipe that my kids absolutely love. In fact, they always say, Mum, your Butter Chicken beats my restaurant any day! And they wont even touch restaurant Butter Chicken anymore.
Now this is one of those recipes that I don’t follow with strict measurements – it’s more about instinct but here’s an approximate guide.
Start with about one kilo of cubed chicken fillets, rinsed and set aside. In a non-stick pot heat a generous spoon of ghee and add a heaped teaspoon of crushed garlic. Let that sizzle. Season with salt, a little hald for color I prefer a bright yellow Butter Chicken rather than orange, just the way my kids like it, and two big spoons of Steers Peri Peri sauce for that kick.
Add in the chicken cubes and a splash of water. Because fillets cook quickly, this dish is ready in less than 15 minutes, making it perfect for busy days.
Cook until the chicken is tender but not dry. Then pour in 500ml of First Choice long life cream the carton with the green lid, not the whipping cream. You’ll notice the sauce thickens beautifully into that creamy, buttery consistency.
Let it simmer gently, garnish, and serve with rice. The key is to keep it nice and saucy! And that it, may signature Butter Chicken, quick, easy, and packed with flavour. A dish straight from my kitchen to yours.
