Carrot and Banana cake

Ingredients

200ml light brown sugar
3 extra large eggs
125ml cooking oil
375ml white bread flour
10ml baking powder
5 ml bicarbonate of soda
250ml finely grated carrots
3 large bananas mashed
125ml seedless raisins or sultans
icing sugar for dusting

Method

1. Beat sugar eggs and oil together
2. Sift dry ingredients and add, alternatively with carrots bananas and raisins to egg mixture.
3. Pour into a greased 22cm ring cake tin
4. Bake in a preheated oven at 180c for 35/40 minutes
5. Leave for a few minutes in the tin before turning on to a wire rack to cool
6. Dust with icing sugar.
